Our Unique Process
Hand Picking
Our staff personally attends to the growing, processing and roasting of
all coffee. With great care, the coffee beans are handpicked at their peak of
ripeness. With handpicking, you know every bean is ripened to perfection, and
the trees are not damaged in any way.
Fermentation
After the beans are washed, the beans and skin are Pulped (with 75+ year-old
pulper), separating the bean from the skin. The bean is then fermented for 12-24
hours and then rinsed again and sent to the initial drying deck. This fermenting
process allows for storage of sugar within the bean which are necessary for
quality roasting.
Drying
On this dry deck, the coffee is raked by hand every half hour for the first day.
On the second day it is raked every hour. This greenhouse drying allows for
natural baking heat and uniform drying.
Full Sun Drying
Naturally, by the sun, the beans are dried to exactly 11.5% moisture. This is a
process that is rarely included in coffee processing, but is essential for
premium taste. The coffee is then placed in a special storage area for aging,
which takes no less than 2 months. Like fine wines, the best coffees are aged to
perfection.
Roast to You
After the aging and removal of the last two skins, the coffee is separated into
grades before it is roasted. See our Roast
